The best things in life take a little work, and BBQ sauce is no exception. So forget the bottled up version (which is loaded with additives and sugars btw), and make your own barbecue sauce from scratch. Which takes just 15 minutes of your time, so you’ll be done before you know it.

Let’s start off by stating the obvious: there’s no single best way to make barbecue sauce. As depending on where you find yourself, the ingredients will vary vastly.

Starting with the vinegar,Β ground black pepper, and hot pepper flakes base from South Carolina. This version yields a killer mopping sauce (i.e. to baste the meat while cooking, and as a dipping sauce when served). A double-duty sauce, sort of thing. This BBQ sauce, made with no sugar, is thin and sharp. And it’s ketogenic friendly.

Most of the other variations include tomato sauce (paste or ketchup) and sugars (honey, brown sugar and molasses). Double-duty sauces all the way.

So in the end, we ended up making two versions. Both equally killer, just slightly different.

The first is slightly sweetened with honey and thickened with cornstarch, gluten free approved. While the second one, pure vinegar and killer spices, is thin and sharp. It penetrates the meat, so it’s ideal for marinating and making keto approved meals. Though note that it can thickened with xanthan gum to make a glaze if you so wish.

Pure vinegar and killer spices, this homemade BBQ sauce is thin and sharp. Though feel free to thicken with arrowroot or xanthan gum if you wish to make a glaze.

  1. Mix in a saucepan the vinegar, olive oil, paprika, oregano, garlic, black pepper, cumin, chipotle, cayenne and salt. Simmer over medium/low heat for 3-4 minutes. 

  2. If you wish to make a glaze, dissolve the arrowroot or xanthan gum in water and whisk it into the saucepan. Continue to simmer, whisking constantly to avoid lumps, until the sauce begins to thicken. Lower the heat to low. Continue to simmer just until desired consistency is reached. Thinning with more water as needed, or thicken with more arrowroot or xanthan gum. 

  3. Store in an airtight container in the fridge for up to 5 days.
