    I have done some reading about keto and I am not sure I can believe the hype. But I really want to believe it. I have over a hundred pounds to loose and I was wondering if your book cover how keto works? How to get started on keto? If not can you advise me on a reputable website?

      Pardon me for butting in. Bev, Keto isn’t hype it’s very much based in science. It not only sheds pounds but the way you feel on it is life changing. There is a wealth of info online but for a clear explanation that’s easy to understand look up Dr. Berg on YouTube. He has lots of videos explaining many aspects of keto.         So glad to hear your enthusiasm! I am of the much older generation and have been doing Keto for 11 months. Not far from my goal weight, but when I get there, I will not change my way of eating. Maybe just a few more carbs, if I can afford them.

        This is one of the things I love about the keto community. I’m new. 6 weeks in. Love the energy and the sleep and the wat I feel. Especially the inflammation in my hands is gone. Big bonus…down 19 pounds. Would have been more but I went to Youth camp and added 8 pound gain. Had to relose that.

      Hi Bev

      Keto is a way of feeding yourself in a matter that allows you to run your body on fat instead of carbs and that is what makes the difference. Thomas DeLaur and Dr Eric Berg are some reputable youtube public speakers. It is free to watch all their videos and and and.

      I am on keto foods in one shape or form over 14 years now after my addiction to wheat (carbs) came to a standstill with several severe heart attacks and all this due to undiagnosed diabetes. I was insulin dependent for 2 years until I started a different approach with better food intake (paleo) and that made me shred an incredible 55 kg of fat.

      After this I am convinced, doing very moderate excercise and best high fat intake, that I am in control of my health. No longer do I require medication or ultraregular Dr visits. In short all is well!! If you helprequire or a chat then drop me a line and we will get there.

      Watch the Magic Pill, you tube Dr Ken Berry, MD has over 200 videos and starts at where to get started- this is one of the best sites for recipes and Im about to checknout this sale. I have never made any of her recipes and not like them! Leto for life here! Was on 4-5 shots of insulin a day. No now diabetic meds and a normal A1C, down 60 lbs. it works great!

      Hey Bev, I have been on Keto for 10 months. I lost 35 pounds the first 6 months. I have been on a plateau for a few months, but the exciting part of this is that I didn’t gain any back. I just keep eating Keto until I am satiated and I stay full longer. I have less of my chronic pain, I do not have cravings and I have more energy than my 60 year old body knows what to do with. I am certain I am putting on muscle as I work and play this summer and that accounts for my clothes getting looser even though the scale hasn’t budged. Muscle weighs more than fat. The biggest thing for a yo-yo dieter, that I had been for 40 years is that I have not cheated once. I don’t need to cheat with these awesome recipes. It is food that satisfies. πŸ˜€

    Dear Paola, thank you so much for sharing your enormous talent with the world. I am only too happy to be able to purchase this cookbook to support the hard (and delicious) work you do. I identify primarily as a baker in terms of the culinary arts πŸ™‚ but love cooking everything. What I love most are your baked goods and desserts and the complexity and texture you manage to achieve! I started eating low carb/lazy keto about 10 months ago and am perfectly fine accepting some tradeoffs in taste and texture in exchange for the many, many benefits of cutting the carbs. However, now that tradeoff margin is razor thin! Your biscuits OMG, your tortillas! The list goes on – your mayo is a recent fave – oh, and the coffee ice cream! I’m in love!!! Ha ha. And if I may… I’d love to put in a request for a salted caramel ice cream one of these days! Feel guilty asking for anything when you have given us so much. Anyway, thanks again, you wizard! My husband and I love your creations. There are many great sites out there who I also love and frequent, but you are at the top of the heap, Paola!

    Do any of the recipes need adjusted for High Altitude cooking? We are at 5000+ and some things do not lift, rise, or cook the same as they did when at lower levels.

      Hi Sheila! I’m currently in Mexico City (12-13,000 ft!) so no need to worry- all the recipes work for high altitudes (a lot of readers from Colorado comment frequently) xo!

    Hello Love! i am enjoying my ebook, that cone recipe was da bomb and barbecue sauce is on point(minus oregano…lol)…I have tried many other recipes as well, one behooves me though…I cant seem to get my chips to “puff” .They become concave on one side but never creating the puff you have in the photos.. πŸ™

So awesome to hear you’re enjoying the book πŸ™‚ Regarding the chips, it’s happened to a few readers before and usually what solves the puffing issue is to decrease the water (large eggs or various brands simply absorb water different- coconut flour is notorious for this). So try either eliminating the water completely or just adding 1 tsp! Hope this helps! xo

    Me encantan tus recetas. Siendo mexicana ha sido muy difficil para mi familia (tu sabes por lo de los tacos, las tortas πŸ€ͺ y los tamales ) hacer el cambio a una vida cetogenica pero gracias a tus recetas hemos sobrepasado el primer mes. Mi hijo que siempre ha sido super super picky le encantaron tu receta de waffles y las galletas realmente les ha ayudado a quitarse la ansiedad del pan y azucar acabo de comprar tu libro y no puedo esperar en hacer todas las recetas. Muchas gracias por toda la informacion

    How many of the recipes require the use of an oven? Just hate the way it heats up our whole apartment so I want to avoid using the oven in summer if possible!

      Hi DB! I just did a quick count and about 17 require an oven (mainly the baked goods). Some you can do on the grill instead (roasted aubergines can be grilled for instance). xo!

    I have just received your Keto summer e-cookbook. Recipes look great & I am excited to try some of them. I have one question-you say that you can probably substitute the flaxseed meal with psyllium husk powder–when doing that it the measurement 1:1 ex. 1/4 cup flaxseed meal = 1/4 psyllium husk powder. I do not use flaxseed or chia due to much controversy in the keto community. I have tried many of your recipes and I have had very good results with them. Just made graham crackers last week for the grandchildren & they loved them. Also make your cinnamon toast cereal all the time for them. Thanks for all your hard work and willingness to share your recipes with others.
