2-4tablespoonserythritolor sweetener of choice, to taste
Add coconut milk, avocado, vanilla extract, mint extract, salt and sweetener (lower amount) to a blender (bullets work amazing here!) and blend until creamy smooth. Taste for sweetness, as traditional shakes are super sweet (but your keto palates will likely need a lot less sweetener!)
Add in ice and blend until thick and creamy, adding a little water as needed. Do not over-blend, or you'll lose thickness and coldness. Enjoy right away with a generous helping of homemade whipped cream.
*I always suggest adding extracts a little at a time, as they can vary from brand to brand (I like mine extra minty and do 1/2 tsp!). And while mint extract is more traditional, you can also get away with using peppermint! Please note that nutrition facts were estimated using 100g of avocado (about a medium one).
