This keto strawberry spinach salad is definitely one of my favorite spring and summer dishes. It’s one of those salads you whip up without great expectations, a complementary-dish sorta thing. Then you taste it. And boooom!!!ย ๐๐
Ideal for summer barbecues, picnics and fresh lunches (or dinners!). Just always be sure to add the dressing right before serving, keeping the spinach nice and crisp.
Trust me, this is one salad that will keep you coming back for more.
The Add-Ins
The nice and nifty thing about this keto salad is that it is easily customizable. And without losing any greatness, that is!
The base are strawberries andย spinach.
The remaining bits and bobs can be customized to the heart’s desires. You can add basil leaves for extra freshness, cheese (think goat’s or feta) for added creaminess, toasted pecans or walnuts for some crunch… You’ve got options!
As per salads in general, try to keep your ingredients top-notch. They really are the make-it or break-it elements of raw dishes.
Oh and for dressings in general, I’ve really enjoyed using Lakanto ‘maple’ syrupย in place of honey (or maple syrup). It works nicely with olive oil and vinegar to add a touch of sweetness to certain salads.
Paleo & Keto Strawberry Spinach Salad
Ingredients
For the dressing
- 60 ml extra virgin olive oil
- 2 tablespoons red wine vinegar or balsamic vinegar
- 1-2 tablespoons Lakanto syrup or maple syrup if paleo*
- 1 tablespoon shallot or onion, very finely minced
- 1/4 teaspoon kosher salt
- freshly ground pepper to taste
For the salad
- 200 g baby spinach
- 200 g strawberries sliced
- 3 tablespoons basil leaves ribonned
- 60 g pecans or walnuts lightly toasted and roughly chopped
- 40 g feta or goat cheese optional
Instructions
- Combine all the ingredients for the dressing in a small bowl. Set aside.
- Toss together in a salad or mixing bowl the baby spinach, strawberries, pecans and goat cheese (optional). Top with the dressing right before serving.

My husband is doing at a Candida cleanse, and cannot have vinegar. Wonder how lemon juice would work instead of the vinegar?

Love this combination! We are lucky to have a specialty oil & vinegar shop in our town and they carry a yummy maple balsamic vinegar (no sugar), so I just used that instead. Pistachios are my go to nut with strawberries. I love this salad, Paola! We’ll be enjoying this all summer. Thank you!
Made a slight variation of this salad yesterday for Mother’s Day dinner for my family. I was rushing and just made it from memory. Since I had chopped, toasted hazelnuts I used those. Even though I forgot the basil and Lakanto syrup it was still a huge hit.
Now I’m going have to get the ingredients again this week and actually follow the directions ๐

This salad is awesome. I added diced panchetta but have used crisp diced bacon as well. It’s really good!
