All natural, from scratch

We’re talking a vegan mint chocolate chip frozen yogurt with actual mint (rather than peppermint extract). Oh, and no artificial coloring!

The trick?

An avocado. ?

That’s right. An avocado will not only give it a lovely light green hue, but it will up the fats needed to yield a suuuuper creamy ice cream. With no added taste, promise.

Plus, this froyo won’t freeze rock solid, like your usual homemade ice cream.

Trick numero dos? A touch of booze. ?

And by a touch, we really mean just a touch. Think 3/4 teaspoon of vodka (or booze of choice). Remember that high alcoholic beverages do not freeze, so they will help your frozen yogurt (or any homemade ice cream) stay creamy smooth rather than rock-solid. Just don’t overdo it, or you’ll end up with a slushy.

Ah, and if not vegan, feel free to substitute the coconut yogurt for Greek-style yogurt and the agave nectar for raw honey. Works (fantastic!) both ways. ?

The Mint ?

Natural mint is subtle, yet still ridiculously fragrant. We find that the ideal method of extraction is to infuse the agave or honey with it over a water bath.

Having said that, feel free to sub for peppermint extract (about 3/4 to 1 teaspoon).

The Method

Using an ice cream maker is always fastest (20 minutes and ta-da!), but this frozen yogurt does not require churning. So if no machine is at hand, don’t sweat it.

Go ahead and place your ice cream batter, in a covered container, in the freezer straight after mixing. You will then want to check on it every couple hours or so, and give it a vigorous stir to break up the ice crystals. You are essentially churning it by hand! Your frozen yogurt will be ready in about 6 hours.

Ingredients

  • 210 g agave nectar
  • 30 g packed mint roughly chopped
  • 720 g plain coconut yogurt
  • 1 avocado
  • 1 tablespoon freshly squeezed lemon juice
  • 3/4 teaspoon vodka optional
  • 100 g dark chocolate finely chopped

Instructions

  1. Mix the agave nectar with the mint leaves in a small bowl, and simmer in a water bath for 20 minutes. Sieve the mint leaves out, and allow to cool completely (very important).

  2. Place the yogurt, cool mint-infused agave, avocado, lemon juice and vodka (optional) in a food processor or blender and process until smooth. Transfer to a container, fold in chocolate and freeze for 6 to 8 hours, stirring every so often to break up ice crystals. 

Recipe Notes

If not vegan, feel free to substitute the coconut yogurt for Greek-style yogurt and the agave nectar for raw honey. ?

    This sounds wonderful. Can I substitute xylitol for the agave if I use the mint flavoring? If so, how much should I start with?

      Hi Patty, sorry I’m just finding your comment. You can sub with xylitol and use mint flavoring. I’m actually working on a more kets-like version of this recipe (out in a month or two). xo!
