Keto ‘Rice Krispie’ Treats

We will do an in depth review later on this week, going into detail about all the keto cereal brands currently in the market. None of them are perfect, but Magic Spoon is very good IMO (and its frosted and fruity flavors are perfect for these marshmallow treats!).
And fact is, if you use a good quality gelatin (think grass-fed etc), you’ll actually be adding in a good amount of nutritional punch.
And yes, please do expect them to be different from actual Rice Krispie treats. (Obviously?) as we aren’t using puffed rice, and the keto marshmallows aren’t ‘re-melted’ (only actual sugar has this ability).

The marshmallows themselves are super easy (you guys tell me this very surprised all the time!). And the ingredients are also very simple: gelatin, a sweetener and vanilla extract! Add water, a touch of salt, and a little magic (i.e. chemistry) and you’ve got some seriously fluffy keto marshmallows at your fingertips.
You’ll simply be making half a batch of the marshmallow mixture, and folding it into some Magic Spoon cereal (or cereal of choice). I suggest adding the marshmallow to the cereal bowl, so you can control the stiffness of your treats.
Just like regular Rice Krispie treats, you want to add ‘just enough’ marshmallow that all your cereal is covered. I did add an extra thin marshmallow layer on top, but not really ‘necessary’ in hindsight.
And do note that I recommend using allulose as your sweetener (as opposed to xylitol), as it takes a bit longer to set (you don’t have ‘to rush’ as much). I also suggest using the lower range of sweetener amount if your palate is ‘keto adapted’, as you’ll be pairing it with the cereal.
Indulge as is, or even go for some melted chocolate on top (!!). I totally did this with some leftovers 😉 Oh, and talking chocolate, remember that you can use the leftover marshmallows for your hot chocolate!

Please see the post on the marshmallows for full deets. Have all ingredients ready and measured out, as you don't want to be interrupted for roughly 20 minutes. Remember that marshmallows set quickly, so you'll have roughly 4 minutes max to fold in your cereal (i.e. you want to be ready!).
Measure out your Magic Spoon cereal of choice into a large bowl- I used a mixture of the frosted and fruity flavors. Set aside.
Line a 9x9-inch pan with foil and grease well with coconut oil. I ended up using only half of the pan for the 'rice krispie treats' and the other half for some of the leftover marshmallow mixture. Set aside while you make the marshmallows.
Once the marshmallows are ready, turn mixer off, and quickly fold in about half the mixture into your cereal bowl to start. Just like regular Rice Krispie treats, you want to add ‘just enough’ marshmallow that all your cereal is covered (this is key so they actually resemble cereal bars). Transfer to the prepared baking tray, and don't worry too much about what's left behind in the whisk etc, or your marshmallows will likely set in the bowl itself (!!).
Allow your marshmallows to dry, uncovered and at room temperature, for 6 hours or preferably overnight. Gently remove from pan and cut with a greased knife. In my experience keto marshmallows don't need dusting as they're not overly sticky, and a touch of coconut oil does wonders if need be. Store in an airtight container at room temp for 3-5 days (and yes, they stay crisp- its a miracle!).

And keep in mind that when calculating nutrition facts, it's generally common practice to subtract sugar alcohols as you do fiber... which essentially makes the keto marshmallows 0g net carbs.
Otherwise, Magic Spoon is 3g net carbs per 3/4 cup... so each keto Rice Krispie treat comes out to just 1.5g net carbs.
