Suuuper Warming Tomato Soup ?
A True Winter-Warmer ❄️
This is the tomato soup of my childhood, a true family recipe (from our European side!). And to be honest, it’s a real gem. It may even be surprising that the soup appears to be super creamy, without having any cream whatsoever.
Or dairy really, for that matter.
The trick lies in sautéing the veggie base (i.e. garlic, onion, celery and carrots) until fully golden before adding in the tomatoes. Cover, and do a 30 minute simmer over super low heat. Oh, and tradition here calls for grass-fed butter, but extra virgin olive oil works great as well.
And also note that we find tomato soup to be rather ironic. As it is a winter staple, despite tomatoes being at their best at the end of summer. So feel free to use some nice and ripe Italian canned tomatoes. Ideal. ?
If Keto ??
While this classic tomato soup isn’t technically keto (ahem carrots… and even tomatoes!), it is still quite low carb. Think 7g net carbs per serving, which can be brought down to about 6g by skipping the carrots.
Suuuper Warming Gluten Free & Paleo Tomato Soup ?
This is the tomato soup of my childhood, a true family recipe (from our European side!). And to be honest, it's a real gem. Super creamy, though with no cream whatsoever... it's a real winter warmer!
- 3 tablespoons organic grass-fed butter or extra virgin olive oil
- 3 cloves garlic finely minced
- 2 medium red onion finely chopped
- 2 carrots finely chopped
- 2 sticks celery finely chopped
- 1 1/2 kg plum tomatoes roughly chopped
- water as needed
- toasted almonds roughly chopped
- feta cheese crumbled
- crème fraîche
Heat butter or oil in a Dutch oven or large pot over medium heat. Add garlic, onion, carrot and celery and cook, stirring often, until lightly golden (13 to 15 minutes).
Add in tomatoes and a large pinch of salt. Once simmering, lower heat to low and cover. Continue to cook for 30 minutes, stirring every so often.
Transfer soup to a blender and process until smooth, thinning out with water or coconut milk as needed. Season to taste.
Return soup to pot and simmer for five minutes. Serve right away with toppings of choice and freshly ground black pepper.
