These thyme & balsamic grilled figs make for a killer and quick entree or side. Serve them over a bed of arugula, in salads, with prosciutto and parmesan, or even to top grilled pizzas (highly suggested)!
So while they are delicious when served on their own, they are also a multi-purpose side dish sort-of-thing.
Hey, you could even serve them as a dessert! Think a splash of vanilla along with the balsamic, ricotta, extra drizzle of honey.
Go ahead and serve them hot or cold, savory or sweet. Just make sure you take advantage of the incoming fig season!

These thyme & balsamic grilled figs make for a killer and quick entree or side! Serve them over a bed of arugula, in salads, or even to top grilled pizzas!
In a medium bowl, mix together your olive oil, balsamic vinegar, honey, and thyme. Add the halved figs and mix until evenly coated
Brush a grill pan with olive oil, arrange your figs in a single layer and cook over medium heat (2-3 minutes on each side). You want them to be lightly caramelized, rather than soft and fully cooked.
Serve them as an entree over a bed of arugula with Parmesan cheese, add to summer salads or as the topping in grilled pizza (highly suggested!)
