BBQ Cauliflower with Creamy Blue Cheese ?

This BBQ cauliflower is one of those dishes that keeps you coming back for more. Forever and ever. We’ve made it several ways, and ultimately couldn’t decide between the roasted and the slow-cooked versions.

Both are ridiculously tasty (and totally addictive!), with the roasted version being crunchier and the slow-cooked one creamier.

Now, while you can make this dish with pretty much any BBQ sauce. We highly suggest you try our homemade BBQ sauce, gluten free and ketogenic.

Roasted

Roasting veggies never fails to bring out a killer earthiness, and cauliflower is no exception. So we like to roast the cauliflower whole, and subsequently sauté it with the BBQ sauce. Killer taste, with a crunchy bite.

Slow-Cooked

If you choose to go with your slow cooker, you will simply need to place the seasoned cauliflower into the slow cooker, add some broth, and cook it on low for 6 hours (or on high for 4 hours). We then like to go ahead and broil it for a few minutes to give it a nice crunch.

Top with pecans and crumbled blue cheese, if you so wish. Optional, but totally yummy.

Vegan

Making this dish vegan is a breeze. Make our BBQ blend with agave nectar instead of honey (tested), cook the cauliflower in olive oil, and opt out of the cheese.

Finger-likingly good either way.

Slow Cooker BBQ Cauliflower with Creamy Blue Cheese ?

This BBQ cauliflower is one of those dishes that keeps you coming back for more. Make it in your slow cooker for a silky smooth result.

Ingredients

  • 160 ml homemade BBQ sauce plus extra for brushing
  • 57 g organic grass-fed butter melted
  • 1 whole cauliflower trimmed at the bottom
  • 3 tablespoons blue cheese crumbled
  • 60 g pecans roughly chopped
  • 120 ml vegetable broth or water

Instructions

  1. Mix together the BBQ sauce with the butter. Rub the cauliflower head with the sauce. 

  2. Place the seasoned cauliflower into the slow cooker, and pour in the broth. Cook on low for 6 hours or on high for 4 hours. Your cauliflower will be done once you can pierce it easily with a sharp knife.

  3. Before removing your cauliflower from the slow cooker, turn on the broiler. Cut your cauliflower into little branches and spread onto a rimmed baking tray. Brush the surface with more BBQ sauce and broil for 3-5 minutes, until browned. Serve right away with crumbled blue cheese and pecans.

Ingredients

  • 1 whole cauliflower trimmed at the bottom
  • 2 tablespoons extra virgin olive oil
  • kosher salt
  • black pepper freshly ground
  • 57 g organic grass-fed butter melted
  • 160 ml homemade BBQ sauce plus extra for brushing
  • 3 tablespoons blue cheese crumbled
  • 60 g pecans roughly chopped

Instructions

  1. Preheat oven to 400°F/200°C. 

  2. Place the trimmed cauliflower head in a rimmed baking tray, rub with olive oil and season with salt and freshly ground black pepper. Roast for 35 to 40 minutes. Your cauliflower will be done once you can pierce it easily with a sharp knife. Cut your cauliflower into little branches. 

  3. Heat up a skillet or pan over medium/low heat. Add the butter and brown it (cook it for 3 to 5 minutes until lightly golden), and add the barbecue sauce. Add in your roasted cauliflower florets and sauté for 7 to 10 minutes. 

  4. Serve right away with crumbled blue cheese and pecans.
